Chocolate Chip Oatmeal Bars

The other day I felt like baking something, but I couldn’t find a recipe for the thing I wanted to make.  So I made up one.  I wanted oatmeal-something, but didn’t feel like taking the time to make individual cookies, so I decided on bars instead.  Originally I was thinking about something with raspberry jam, but I guess I just wanted something with red because I settled on dried cranberries instead! 😉  They turned out great– a soft cookie bottom with crunchier bits on top.

Chocolate Chip Oatmeal Bars

(makes 1 8″ square pan)

1/2 cup butter, softened

1/2 cup brown sugar

1 egg

1 tsp vanilla

1/2 cup all-purpose flour

1 1/2 cups plus 2 tbsp quick-cooking oats

1/2 tsp baking powder

1/3 cup semi-sweet chocolate chips

1/2 cup chopped pecans

1/4 cup dried cranberries

Preheat oven to 375°F.  In a medium mixing bowl, cream together butter and sugar.  Beat in egg and vanilla.  Add flour and  1 1/2 cups oats, sprinkle the baking powder over it all, and then mix together.

Grease an 8″ square pan.  Reserve 1/3 cup of dough, spread the rest in the pan.  Combine reserved mixture with the remaining 2 tbsp oats.  Sprinkle chocolate chips, pecans, and cranberries over crust, then crumble the remaining oat mixture over top.  Bake for 15-20 minutes or until lightly browned.  Cool in pan and then cut into squares.

Obviously, this recipe lends itself well to variations– other flavours of chocolate, other kinds of nuts, raisins, pumpkin seeds, sunflower seeds, etc.
